Fresh Milled Rye Brownies

Before I discovered fresh milled flour, I had no idea there were so many different types of wheat. Like many people, I thought flour was just… flour! But after months of baking with different grains and experimenting with freshly milled flour, I became curious about rye.

From the very beginning of my fresh milled flour journey, I knew I wanted to use rye in a sourdough starter. I had heard a French baker say that rye is one of the best grains for sourdough because its natural enzymes help create an active, fast-fermenting culture. As a complete beginner, I wasn’t sure what to expect, but I’m happy to report she was right.

I started my sourdough starter from scratch using freshly milled rye flour, and it was surprisingly easy. The starter became active quickly, consistently doubled in size, and produced beautiful sandwich loaves with a great rise. For my first sourdough starter, I couldn’t have asked for a better experience.

Other than feeding my starter, though, I hadn’t done much baking with rye. Then I stumbled across a recipe for rye brownies online and immediately knew I had to give them a try.

I’m so happy I did!

Rye adds a rich, slightly earthy flavor that pairs beautifully with chocolate. The result is a brownie that feels a little more sophisticated than your average brownie while still being completely kid-approved in my house.

But before I share my adapted version of the recipe, let’s take a quick look at what makes rye such a unique grain.

Why Bake with Rye?

Rye isn’t just for bread. This ancient grain brings wonderful flavor to baked goods and offers some impressive nutritional benefits as well.

  • Higher in fiber than many common wheat flours, helping support healthy digestion and lasting fullness.
  • Contains prebiotic fibers that help nourish beneficial gut bacteria.
  • May support steadier blood sugar levels thanks to its unique fiber profile.
  • Naturally rich in minerals like magnesium, phosphorus, iron, and zinc.
  • Contains antioxidants and other beneficial plant compounds found in the whole grain.
  • Whole rye flour includes the bran, germ, and endosperm, preserving nutrients that are often removed during refining.

Of course, these brownies are still a treat! But using freshly milled whole rye flour adds a little extra nutrition, a depth of flavor, and a wholesome touch that makes them feel just a bit more special. Be careful though, after sharing with friends and family,  I did get a text saying they were “Best ever 100%” brownies.

Fresh-Milled Rye Brownies (Kid-Friendly Version)

Rich chocolatey brownies made with fresh milled rye flour.

Ingredients
  

  • 1 cup butter melted
  • 2 cups sugar
  • 1 cup cocoa powder
  • 4 eggs
  • 2 tsp vanilla extract
  • 1 cup fresh-milled rye flour
  • ½ tsp salt
  • 1 tsp baking powder
  • ¾ –1 cup Enjoy Life chocolate chips
  • Optional: 1 tsp espresso powder
  • Optional: flaky salt for topping

Method
 

  1. Preheat oven to 350°F.
  2. Grease or line a 9×13 baking dish with parchment paper.
  3. In a large bowl, whisk together melted butter, sugar, cocoa powder.
  4. Add eggs and vanilla. Mix until smooth and glossy.
  5. Mix fresh-milled rye flour, salt ,baking powder, espresso powder (if using) in separate bowl, then mix in with wet ingredients.
  6. Fold in chocolate chips.
  7. Spread batter evenly into prepared pan.
  8. Sprinkle flaky salt lightly on top if desired.
  9. Bake for about 28–35 minutes, until the center is just set and a toothpick comes out with moist crumbs (not wet batter).
  10. Let cool before cutting for the fudgiest texture.

Notes

Fresh-milled rye can make brownies taste deeper and more chocolatey.
These will likely taste even better the next day.
If you want ultra-gooey brownies, pull them out slightly earlier.
If your kids love very sweet brownies, use the full 1 cup chocolate chips. I use 1 cup of chocolate chips.
